Carob, scientifically known as Ceratonia siliqua, is a native of southeastern Europe and west Asia. The fruit is used medicinally and contains tannins. Carob is used for acute nutritional disorders, celiac disease, diarrhea, dyspepsia, enterocolitis, and vomiting.
Carob, as a flour and extract, is used in foods, such as glutin-free starch breads, as a flavoring agent and as a chocolate substitute.
